Chicharõ trenzado

Chicharõ trenzado, or braided beef, is a uniquely prepared Paraguayan meat dish featuring flank steak (matambre) cut into long strips and intricately braided before cooking. The result is a rustic yet visually striking dish known for its rich flavor, crispy exterior, and tender interior.


The braided meat is first fried in its own fat with just salt and pepper, enhancing its natural beefy flavor. Once browned, it’s gently simmered with aromatics—including onion, bell pepper, garlic, bay leaves, and parsley—until fork-tender.


A final quick fry crisps the outside, giving it a satisfying bite. Finished with a squeeze of fresh lemon juice, chicharõ trenzado is served hot and often accompanied by cassava or salad.
