Best Anhui Beverage Types
Keemun hails from Qimen County in the Anhui Province, and it is one of the most popular Chinese black teas. Often dubbed as the Burgundy of teas, it is a fragrant and complex tea with a layered flavor profile. Standard Keemun tea is known for its earthy character, which is often accompanied by spice and cocoa hints.
The best expressions will be rounded, mellow, subtly floral and fruity, with a full body and hints of sweetness. When brewed, it has a distinctive red copper hue and is typically low in tannins. Although Keemun is now best known for its black tea, regional production was initially oriented towards green tea.
Huangshan Maofeng is a green tea produced in Huangshan, Anhui. It is one of the most popular Chinese green tea varieties and is considered one of the top ten Chinese teas. It can vary in quality, appearance, flavor, and aroma, depending on the harvest time and production techniques, but the best examples are harvested in the spring, and processed leaves are small, wavy, slender, and covered in soft white fuzz.
When brewed, this tea produces a bright and clear yellow-green liquor with a fruity and subtly sweet flavor, minimal astringency, and floral aroma that is often reminiscent of orchids. It has a long and mellow finish. Maofeng from Huangshan would pair well with seafood, fresh fruit, and light desserts.
Huo Shan Huang Ya is a refined and delicate yellow tea from Huo Shan. The tea is lightly fermented, and it is withered indoors. Before it completely dries out, it is covered, which gives the leaves a subtle yellow hue. When steeped, the beverage attains light-straw color.
The tea is smooth, round, fresh, and subtly sweet, while the aromas include a blend of floral, herbaceous, and fruity notes, as well as nutty nuances. This tea is not rich in tannins and shows little astringency. During Ming and Qing dynasties, Huo Shan Huang Ya was the preferred tea choice at the royal court.
