Bacalao frito con tomate is a traditional cod-based dish originating from Spain. The dish is usually made with a combination of dried salt cod (soaked in water for a day), onions, tomatoes, garlic, bay leaves, roasted bell peppers, olive oil, and flour.
The cod is cut into pieces, dredged in flour, and fried on both sides in olive oil before it’s removed from the pan. The onions and garlic are chopped and fried in the same oil until soft and translucent. Tomatoes and bay leaves are added to the pan along with the codfish and sliced roasted peppers.
