Arròs de la terra

(Arros de moro)

Arròs de la terra is a traditional dish originating from the Balearic islands. Although the name of the dish mentions rice, the dish is actually made with a combination of cracked wheat, sobrasada, pork, bacon, white pudding sausage, potatoes, tomatoes, garlic, olive oil, and salt.

The cracked wheat is soaked in cold water, then mixed with the other ingredients. Garlic is placed in the center, the dish is drizzled with olive oil, seasoned with salt, and it's then baked in the oven until everything is fully cooked.
