Arôme de Lyon is a traditional cheese produced in the region of Auvergne-Rhône-Alpes. The cheese is made from raw cow’s milk. Underneath its natural or bloomy rind covered with the residue of pressed grapes (grape marc), the texture is soft.
During the production process, the cheese is macerated in white wine or residue of pressed grapes. Goat’s milk is sometimes also added to the mixture while making the cheese. Although this cheese is produced throughout the year, it’s at the peak of its popularity in winter.
