Yellowman

Yellowman is a crunchy, chewy, and sweet confectionery produced in Northern Ireland. Although there are numerous local variations regarding the ingredients and recipes, it is believed that the key components of Yellowman are golden syrup, butter, vinegar, brown sugar, and soda bicarbonate.

This sweet treat is sold in non-uniform chips and blocks, and it usually comes wrapped in transparent paper. Yellowman is mostly associated with the Ould Lammas Fair where it is regularly sold alongside various other confectionery products and dulse seaweed.
