Xarém

(Xerém)

It is believed that this traditional Portuguese dish – a specialty of Algarve - has medieval origins. Xarém is a maize porridge that's prepared in numerous versions throughout the region. The most common recipes call for a combination of cornflour, white wine, clams, smoked bacon, ham, pork sausages, and seasonings.


The meats are chopped and fried over low flames, then mixed with boiled clams and heavily-stirred cornflour mixture. The dish is traditionally served hot.
