Tinutuan is Indonesian rice porridge that originated in North Sulawesi in the city of Manado, but it's also often associated with Minahasa. The most common vegetables used in tinutuan include spinach, pumpkin, cassava, and corn, but other vegetables can be used as well.


Due to its liquid consistency, it is served in a bowl, together with salted fish and a spoonful of sambal on top. This savory porridge is originally vegetarian, but on special occasions, meat is sometimes added to the dish. It is commonly served for breakfast, and people usually flock to the stalls in the early morning to get this nutritious breakfast.

Traditionally made by the native Minahasan people and hailing from North Sulawesi, this Indonesian dish employs fruit bat as the main ingredient. Though bats are often fried or grilled, the most popular way is to incorporate them into paniki, the traditional soup-like dish.


The usual procedure starts with grilling the bat to remove all the hairs covering its body. The bat is then cleaned, its intestines are removed, and it is cut into smaller chunks and boiled in water. The dish is finished off with the addition of fried onions, garlic, ginger and chili paste, leeks, curry leaves, lemongrass, and coconut milk.

Konro is an unusual soup originating from the city of Makassar, located in South Sulawesi. This rich beef soup, commonly referred to as sop konro, is usually made with spare ribs cooked in a flavorful broth. The dish has a unique and distinctive flavor due to the use of traditional Indonesian spices such as kluwak and galangal.


However, even though it is flavorful, unlike the majority of national dishes in Indonesia, it is not particularly spicy. Usually, the ribs are served together with the broth, but the dish can sometimes be divided in a two-course meal, when broth and ribs are served separately.

Panada is an interesting Indonesian take on Spanish and Latin American empanadas. These deep-fried, crescent-shaped pastries consist of leavened dough and a fish-based filling. The Indonesian version is traditionally filled with a combination of skipjack tuna, onions, coconut milk, chili peppers, and other optional ingredients.


The name of this convenient snack unmistakably resembles Spanish empanadas—small pies that originated in Galicia, but which have become a staple in Latin American countries. However, it is believed that the origin of panada was influenced by the Portuguese, who were present in the area since the 16th century.
