Wood pigeon, or common wood pigeon, is a bird species that has grey plumage and is distinguished by the white marks found on its neck and wings. Scientifically known as Columba palumbus, the bird comes from the family of Columbidae, and it inhabits Europe and western Asia.
Wood pigeons are considered a quintessential delicacy in the Basque Country, where they migrate to each year from the middle of October through November. Birds caught in the wild are said to have a distinctive gaminess and a less rich flavor. Specialties prepared with wood pigeons are commonly available in numerous restaurants during the hunting season both in France and Spain.
