Triple sandwich is a Peruvian staple consisting of thin slices of bread, avocado slices, tomato slices, sliced hard-boiled eggs, and mayonnaise. The crust is trimmed from the bread slices, while the avocado slices are usually seasoned with salt, pepper, and lime juice.
The sandwich is constructed by putting mayonnaise on each bread slice, then layering the rest of the ingredients. Once assembled, the sandwich is cut into two or four triangles and it's ready to be served. Of course, there are variations, so feel free to add shredded chicken, ají chili peppers, or tuna to this simple Peruvian sandwich.
