Tokhme banjanromi

Tokhme banjanromi is a traditional egg-based dish originating from Afghanistan. The dish is usually made with a combination of eggs, oil, onions, garlic, tomatoes, hot peppers, chili powder, salt, pepper, and coriander. The onions and garlic are fried in oil until softened.

The tomatoes and hot peppers are added to the pan and cooked until the tomato is softened. The mixture is seasoned with salt, and the eggs are then broken over the mixture. The pan is covered with a lid and the dish is cooked gently until the eggs are set.

Finally, tokhme banjanromi is seasoned with black pepper and chili powder, then garnished with chopped coriander before the dish is served hot and straight out of the pan. It's recommended to serve the dish with fresh naan on the side.
