Tinaransay is a traditional dish originating from North Sulawesi, where a lot of the population is Chinese or Christian, so the Muslim rules on eating pork don't apply. The dish is made with a combination of pork shoulder or leg, ginger, hot chili peppers, oil, shallots, kaffir lime leaves, lemongrass, and salt.
The pork is cut into chunks, while the ginger, chili peppers, and shallots are ground into a paste that's stir-fried until fragrant. Pork is then added to the pan and simmered in its own juices. If the gravy becomes too dry, it's recommended to add a little water.
