Timoleague Brown Pudding

(Putóg dhonn tí molaige)

Timoleague brown pudding is a variety of blood sausage made from fresh pig’s blood, pork trimmings, cereals, fresh onions, seasonings, spices, and natural casings. It is prepared from the meat sourced from the producers within a six miles radius of the processing facility at Timoleague in West Cork.


This area is well known for its fertile soil and pastures that give the pudding its distinctive flavor. As a result of the inclusion of fresh blood, the flavor of the pudding is very clean and rustic. The West Cork traditional method requires the pig's blood to be soaked in oatmeal the night before, and combining it with cereal gives the pudding its typical flavor and texture.


This tradition started a long time ago. The recipe was invented by the locals after slaughtering pigs for home consumption in order to use all the edible parts for the production of puddings.
