Rheintaler Ribelmais

Rheintaler ribelmais is ground cornmeal made with a heirloom variety of sweet corn, grown and processed in the Swiss canton of St. Gallen. Cornmeal used to be a staple in this part of Switzerland, but after two World Wars, production dropped off dramatically until Verein Rheintaler Ribelmais was founded with the goal of promoting and preserving this long-forgotten cereal.


Nowadays, Rheintaler ribelmais is available in two different forms – traditional, finely ground, and bramata, with a coarser grain. The most authentic way to try it is in a traditional breakfast known as Türggenribel, consisting of small, golden lumps of butter-fried Rheintaler ribelmais, served dunked in milk-laden coffee.
