Quadrefiore

Quadrefiore is a thick, square-shaped variety of Italian pasta, made with semolina flour and water. The ridged lines running down the sides and their hollow middle make them perfect for catching sauces, which is why they pair nicely with almost any sauce or thick pesto.


Quadrefiore pasta is dense and thick, so it is very important not to undercook it – cooking time might be slightly longer than usual, the perfect al dente texture is achieved somewhere between 15 and 18 minutes of cooking.
