Trancio Prosciutto Crudo Stagionato Senza Cotenna is a convenient piece of cured ham without the rind, ready for immediate use with no waste. While most of the rind is removed, a small portion remains to carry the Prosciutto di San Daniele stamp. Vacuum-packed and boneless, the ham can be stored in the refrigerator for up to six months.


After opening, it is recommended to store it at a temperature between +4°C and +7°C, with a damp cloth or plastic wrap covering the cut surface. Best served thinly sliced, either by hand or with a machine, it can be enjoyed on its own, with breadsticks or bread, and paired with a glass of dry white wine like Sauvignon or Friulano.


It also pairs excellently with fruits such as figs, melon, kiwi, apples, grapes, and pears, while acidic accompaniments should be avoided as they can overpower the ham's sweetness and aroma. Sliced into strips or cubes, it is a perfect addition to sauces for pasta, gnocchi, crepes, and vegetable or bean soups.


For a unique appetizer, serve thin slices of ham with soft polenta. Occasionally, small firm granules may be found in the meat; these are not salt grains but harmless tyrosine crystals, a natural substance that forms during protein maturation, indicating a slow and thorough aging process.
