Pimento dram

Pimento dram is a spiced Jamaican liqueur made from allspice berries (lat. Pimenta dioica). This liqueur is popular in Caribbean culture and is characterized by its rich, complex flavor that combines notes of cinnamon, nutmeg, cloves, and a hint of pepper.


Pimento dram is typically made by steeping allspice berries in a base spirit, often rum, along with sugar and water to create a balanced, sweet, and spicy liqueur. The resulting flavor is warm and robust, making it a versatile addition to various cocktails.


The alcohol content usually ranges between 20% and 30% ABV. Pimento dram is prized for its ability to add depth and warmth to various cocktails, particularly those with tropical or tiki influences. Some well-known cocktails that incorporate pimento dram include the Lion’s Tail, which blends bourbon with pimento dram, lime juice, simple syrup, and Angostura bitters, and variations of the Mai Tai, where the liqueur enhances the drink's complexity.


Another notable cocktail is the Chartreuse Swizzle, combining green Chartreuse, pineapple juice, lime juice, and pimento dram for a refreshing yet intricate flavor profile.
