Perroquet

(Parrot)

Perroquet is a traditional mixed drink made with a combination of pastis, mint syrup, and chilled water. In order to prepare it, pastis and mint syrup should simply be mixed in a glass, and the cocktail is then served with a small jug filled with water so the customers can dilute the drink to their preference.


Ice is added in the end until it fills the glass. The name of this drink means parrot, referring to the bird’s brightly-colored plumage. The famous Harry’s Bar in Paris suggests the addition of crème de menthe instead of mint syrup, but the final choice is left to the consumer.
