Pechegos

Pechegos is a French cheese hailing from Tarn. It's named after a plateau in the region. The cheese is made from goat's milk and ages for 8 weeks. The rind is washed with brine, developing copper-like colors as a result. It's easily recognizable because it's bound with spruce bark in order to keep the texture intact.


The texture is very creamy, similar to Mont d'Or. The flavors are complex, flowery, nutty, and sharp, with hints of mushrooms and truffles. It's recommended to serve Pechegos with eggs or potatoes, and pair it with full-bodied white wines such as Jurancon.
