Pasta al ceppo

Pasta al ceppo is a traditional type of pasta. It’s usually made with a combination of durum wheat semolina and water. The name pasta al ceppo means pasta rolled by a stick, and visually, it looks the same as a cinnamon stick. Once it’s been cooked in boiling salted water, this pasta type retains its shape and stays chewy and meaty.


It’s recommended to serve pasta al ceppo with meat- or vegetable-based sauces because much of the sauce will remain captured in the folded middle part of the pasta. Pasta al ceppo can also be baked in pasta casseroles, usually with a sauce based on garlic and sausage.
