Old School Cheesery is a family-owned dairy located in Vermilion, Alberta, Canada, known for producing high-quality artisan cheeses. The cheesery sources cow’s milk from local Alberta farmers, which is pasteurized on-site. After pasteurization, the milk is carefully handcrafted into a variety of artisan cheeses.


Their selection includes different types of cheddar (mild, smoked, dill, garlic, pepper, chipotle, and beer-infused), brie cheeses (Canadian-style, vegetable-infused, and smoked), and the hard cheese "Le Bourdon," which is aged in honey from the local producer Lazy Bee Honey.


In addition to cheese production, Old School Cheesery offers a unique gastronomic experience at its restaurant, where visitors can enjoy dishes such as gourmet melted cheese with bacon and jam, mac and cheese with dill, and smoked mac and cheese. They also provide personalized tours of their production facility, giving guests an insight into the cheesemaking process and the opportunity to taste fresh products.


As the first Économusée in Alberta, Old School Cheesery is dedicated to preserving and promoting the artisan craft of cheesemaking, allowing visitors to experience firsthand the tradition and passion behind these delicacies.
