Classified as one of the modern classics, Old Cuban combines aged rum, mint, lime juice, simple syrup, Angostura bitters, and sparkling wine (preferably Champagne). To make the cocktail, muddle mint leaves with lime juice in a shaker before adding ice, rum, syrup, and bitters.
The ingredients are shaken and strained into a coupe glass. The drink is then topped with sparkling wine. It is usually garnished with mint and a lime wheel. Old Cuban was invented in 2004 by Audrey Saunders, who is best known for her work at the legendary Pegu Club in New York.
