Negus

Negus is a cocktail that combines equal parts of port wine and hot water, sugar, lemon rind, lemon juice, and nutmeg. Traditionally, the drink is made by slowly heating port, sugar, and lemon juice and then adding hot water. When served, it is topped with ground nutmeg.


Variations use sherry or Madeira wines and add various spices. Negus was probably invented and named after Francis Negus—an 18th century English officer, courtier, and politician.
