Nakkikastike is a common Finish home-cooked dish essentially made of sautéed nakki sausages, which are then simmered in a thick, brown sauce that is usually seasoned with tomato paste, onions, carrots, and cream. Nakki is a mild Finnish sausage, similar to frankfurter, hot dog, or wiener.
The traditional recipe for the sauce does not include tomato paste, but it is this ingredient which gives the dish its robust flavor. For a richer flavor, various herbs and spices, or mushrooms can be added to the sauce. Mashed or boiled potatoes are a typical accompaniment to this dish, but it can also be served along with fresh and/or cooked vegetables or pasta.
