Mote con Huesillo

Mote con huesillo is a non-alcoholic drink that can be found on stands all over Chile, especially during the summer. It’s made with water, sugar, cinnamon, dried peaches and hulled wheat called mote. Pearl barley can be used as a substitute if mote isn't available.


The preparation of this drink involves cooking the mote and adding it to the huesillo syrup, which looks like iced tea. The syrup is made with caramelized sugar, cinnamon, and water mixed with dried peaches. The husked wheat is then added to the hot syrup, which is cooked and cooled before serving.
