Marsala Vergine Stravecchio, also known as Marsala Vergine Riserva, is the highest and most prestigious classification of Marsala wine, aged for a minimum of ten years in wooden casks. It represents the purest and most refined expression of Marsala, produced without the addition of mosto cotto (cooked must), concentrated must, or sweeteners, ensuring a completely dry and complex wine with a strong oxidative character.
Made exclusively from white grape varieties such as Grillo, Catarratto, Inzolia, and Damaschino, Marsala Vergine Stravecchio undergoes a fortification process where a neutral grape spirit is added after fermentation to increase the alcohol content while preserving the wine's natural dryness.
With an alcohol content of 18-19% ABV and always classified as Secco (dry) with less than 40g/L of residual sugar, Marsala Vergine Stravecchio is characterized by its intense golden-amber color, structured body, and long, persistent finish. The aging process enhances its oxidative profile, giving it a refined balance between acidity, minerality, and complex tertiary aromas.
Unlike younger or sweeter Marsala wines commonly used in cooking, Marsala Vergine Stravecchio is meant to be enjoyed on its own, served slightly chilled as an aperitif or digestif. It pairs exceptionally well with aged cheeses (Pecorino, Parmigiano Reggiano, Gorgonzola), roasted nuts, foie gras, truffle-based dishes, and grilled seafood.
