Mahyawa

(مهیاوه‎‎, Mehyawa)

Originating from the southern regions of Iran, mahyawa is a traditional fish sauce with a tangy flavor. The sauce is made from salted anchovies and also contains fennel, coriander, cumin, and mustard seeds. It is traditionally served on top of khubz flatbread, which can additionally be topped with a fried egg, if desired.

Mahwaya is commonly sold in Iranian bakeries, in clear bottles that show the brown-colored sauce.
