Lovo

Lovo is a traditional dish prepared with fish or chicken and vegetables cooked in an improvised underground oven. It is a staple of numerous celebrations, weddings, and festivals, and the whole process can take a few hours. A hole in the ground is typically lined with coconut husks which are then covered by heated stones.


Fish or chicken and vegetables are wrapped in banana leaves and placed over the stones, and the whole thing is usually covered with dirt and left to cook. Once it is done, the smoky, barbecued food is typically shared among friends and family.
