Panucho

Recommended by Julianna Barnaby and 5 other food critics.
"Opt for the breakfast panuchos – crispy corn tortillas with your choice of toppings. I went for the cochinita pibil pork, the classic (shredded turkey) and the Maya (chaya leaves with onion and veg). All three were incredibly tasty – boasting a depth of flavour and tenderness that contrasted perfectly with the crunchy tortilla."

Recommendations

"To sample authentic versions of regional specialties, make like a local and head to one of the two branches of La Chaya Maya. I’m still craving La Chaya Maya’s Cochinita Pibil. The pork is marinated in a sauce of annatto and sour orange before being slow-roasted, resulting in a fork-tender dish with soul-satisfying flavor."
"La Chaya Maya is a popular option for eating in Merida – so I made it my first stop after I arrived in the city. I went for the cochinita pibil pork, it was incredibly tasty – boasting a depth of flavour and tenderness that contrasted perfectly with the crunchy tortilla."
"Upon arrival have lunch at La Chaya Maya, a restaurant with delicious food at a very good price, always full of people enjoying their great cooking. Ask for papadzules (Yucatecan enchiladas) and of course, chaya water."

"I am not a great fan of turkey but the "Sopa de Lima", a soup made of shredded turkey, turkey stock flavoured with lime and topped with crisp tortilla sticks was delicious and an excellent start to our meal."

"It’s the place to try regional classics like cochinita pibil, pork marinated in ground achiote seeds and bitter orange juice, baked in banana leaves until meltingly tender."
"Head to La Chaya Maya for a meal of the dishes of the Yucatan. A regional favorite is cochinita pibil, which is pork marinated in ground achiote seeds and bitter orange juice and baked in banana leaves until tender."
"Find panuchos on a menu, and you’ve found your cochinita pibil. A traditional place to try is La Chaya Maya."
"Mayan cuisine is similar to Mexican, however, the cooking style is a bit different. They make special sauces and flavors with unique taste. If you visit La Chaya Maya make sure to try some Yucatan specialties such as cochinita pibil (slow-cooked pork)."

"Delightful place to taste real cochinita pibil, maybe Mérida's most emblematic dish. You can just ask for a dish, or better yet, in many different "antojitos", like tacos de cochinita, papadzules and panuchos. You can't leave Mérida without visiting La Chaya Maya."

"One of my favorite dishes from the southern Mexican cuisine. In this restaurant, they respect the traditional preparation of the dish in terms of the process, which must be cooked underground, as well as the use of local spices. A must-try."

"It is renowned in the whole city as one of the best places to eat authentic dishes from Merida. The best part is that La Chaya Maya lives up to its fame and does not disappoint at all. It is trully a gem in the region. Must try."
