Kukulku riha is a traditional curry originating from the Maldives. It's usually made with a combination of chicken, onions, garlic, ginger, curry leaves, pandan leaves, chili peppers, cumin, coriander, peppercorns, cardamom, cinnamon, turmeric, ghee, and lime juice.
The spices are dry-roasted and ground into a powder, while the chicken is marinated in a mixture of lime juice, garlic, ginger, salt, and the ground spice mixture. Once marinated, it's simmered in a pot with the sautéed onions, curry leaves, and pandan leaves in coconut milk or water.
