Manual harvest, with qualitative selection. Total destemming and crushing. Vinification in open spout or with fermentation. Fermentation in stainless steel tanks with temperature control. Fermentation is interrupted 2 to 3 days after the start of alcoholic fermentation, by adding neutral wine alcohol (minimum 96% vol.) in order to maintain the desired sugar content.
