Jhajariya

(झाजरिया)

Jhajariya is a traditional dessert originating from Rajasthan. The dessert is made with a combination of corn, ghee, sugar, milk, and nuts such as almonds. In order to prepare it, the sweet corn should be ground and cooked in ghee, milk, and sugar until most of the liquid evaporates and the dessert develops a dry and granular consistency.


Once done, jhajariya is usually garnished with saffron strands and slivered almonds. If desired, raisins can also be added to the mix. This rich dessert is traditionally served warm.
