Haddock

Haddock is a member of the cod family that is found on both sides of the Atlantic. It has a slightly elongated body, which can slightly vary in color, depending on the habitat, but it always has a characteristic black lateral line and a distinctive black blotch on the side.


Haddocks are usually sold in the form of a single fillet (large haddocks) or a block fillet (smaller haddocks). Their flesh is firm and moist, while the flavor is mild, clean, and slightly sweeter than Atlantic cod. The fish is often smoked, but fresh haddock is commonly used in a variety of dishes.


Because of its firm flesh, it can be baked, sautéed, poached, and the fillets are often battered and fried. It is one of the most common types of fish used for fish and chips. Haddock is mostly available year-round, but its peak season is from December to February.


It is known under various names throughout Europe.
