Ferraúra

(Ferradura)

Ferraúra or ferradura are flat Spanish green beans originating from Valencia. These green beans are usually elongated and horseshoes-shaped, and they’re traditionally used in Valencian paella. They’re sown between March and April, then harvested in summer.


The green beans are prized for their tender texture and mild flavors. If unavailable, ferraúra can be replaced with other traditional Valencian bajoques (green beans) such as roget, tavella, bobi, or perona.
