Fagioli al fiasco

Fagioli al fiasco is an old Tuscan method of cooking beans. The beans (most often cannellini) are cooked with water, olive oil, garlic, sage, and chili peppers in an empty Chianti bottle with the bottom straw part off. Tomatoes are also added to the mix, except in Florence.


In the past, the bottle was placed on the edge of the fireplace in the ashes to slowly cook overnight. Nowadays, the practice is not as common, but the dish is still sometimes prepared in Tuscan homes. The beans are served as they are or on top of crusty toasted bread.


The word fiasco from the name of the dish denotes a flask.
