Using a Gastrovac (a low-pressure cooker), they maximized the flavor of Malagasy vanilla. By blending it with Japanese sake and mirin, they infused the vanilla essence into shiromiso (white miso), a staple in Kyo-Ryori (Kyoto cuisine). The result is a luxurious milk chocolate bonbon that harmoniously combines the sweet aroma of vanilla with the umami richness of miso, creating a truly unique indulgence.
