Culadur is a fish spread prepared around Lake Como. It is made during the preparation of another local delicacy called missoltini, a variety of preserved shad. To prepare missoltini, the shad must be cleaned and gutted before drying; the insides are fried with oil, onions, breadcrumbs, lemon zest, salt, pepper, dry white wine, and grated cheese, then turned into this delicious spread that is best enjoyed smeared over slices of homemade bread or polenta.
