Codornices en salsa de guajillo is a traditional game dish originating from Mexico. The dish is made with a combination of quail, chanterelle mushrooms, lard or corn oil, guajillo chiles, onions, garlic, oregano, and salt. The quails are cut in half, browned in fat, and removed.
The mushrooms are sautéed in the same pan. The soaked chiles are blended with onions, garlic, oregano, and soaking liquid, then strained and poured into a large pan and brought to a boil. The mushrooms and quail pieces are added to the pan and the dish is simmered until everything is fully cooked.
