Cocido is a traditional stew with a wide array of regional varieties. It's also prepared and enjoyed in Portugal (cozido) and Brazil. The stew is made with a combination of various meats (or sometimes seafood) such as chicken, beef, pork, and mutton, along with cured and dried sausages, and vegetables such as carrots, chickpeas, potatoes, turnips, and cabbage.
Many other ingredients such as cheese or eggs can also be added to cocido to enrich its flavors and textures. The name of the stew is derived from the word cocer, which means to boil. The stew is typically slowly cooked over low heat and most of the cocidos are followed by a word that denotes its place of origin, such as cocido lebaniego, cocido madrileƱo, or cocido gallego.
