It can be plain or combined with mushrooms, vegetables, or meat, typically chicken or veal. Traditional ciulama calls for a combination of chicken gizzards, chicken stock, and
smântâna - Romanian sour cream. This Romanian classic traditionally accompanies
mămăligă (polenta), and is usually topped with chopped dill or parsley.
