Ciorbă is a Romanian sour soup consisting of a variety of vegetables and pork, chicken, beef, or fish. What makes it different from ordinary soups is the addition of acidic and sour ingredients such as borș, lemon, lemon salt, or sauerkraut juice.
Depending on personal preferences, when the ciorbă is almost done, eggs, noodles, or sour cream can be added for a bit of extra texture and flavor. The soup can also be prepared with tripe, pork bones, or beetroot. It is served hot with either lovage, parsley, scallions, or pickled hot peppers and bread.
