Ciccioli

(Cicoli, Sfrizzoli, Risimugli, Pork Scratchings)

Ciccioli is an Italian meat product made by pressing, drying, and aging leftovers of fatty cuts of pork. The meat is usually wrapped in a cloth, then squeezed until all of the excess liquid is removed. These flavorful pork scratchings are often consumed on their own, although they are also often used in focaccias.


It is recommended to pair ciccioli with fresh, light, and young red wines.
