Chile Jack

Chile Jack is an American Monterey Jack-style cheese produced in Colorado by Haystack Mountain Goat Dairy. The cheese is made from goat's milk with the addition of mild and roasted Anaheim green chili peppers. Underneath its waxy rind, the texture is creamy.


The aromas are mild and the flavors are creamy, tangy, and spicy. This semi-soft cheese is often used as a filling for enchiladas, omelets, or quesadillas. It's recommended to pair it with a glass of Chardonnay.
