Casunziei is a variety of stuffed Italian pasta that is traditionally prepared (often handmade) in the shape of a half-moon with crimpled edges. The fillings may vary, so casunziei can be stuffed with ingredients such as cheese, meat, or vegetables.
It is typically served as a main dish with an accompanying sauce, but it can also be added to various broths or used as a salad ingredient. Two of the most authentic casunziei varieties are
rossi (with beets, poatoes, and turnips) and
verdi (with spinach).
