Cascatelli

Cascatelli is a unique pasta shape invented in 2021 by Dan Pashman, host of The Sporkful podcast, in collaboration with Sfoglini Pasta. Designed for optimal eating experience, it excels in "sauceability," holding sauces exceptionally well due to its ridged, ruffled edges; "forkability," making it easy to stab and lift; and "toothsinkability," offering a satisfyingly chewy bite.

Its short, half-tube structure with curved edges resembles a waterfall, which inspired its name from the Italian word for "little waterfalls." Cascatelli pairs best with creamy, hearty, or thick sauces that cling to its distinctive shape.
