Cắp nách is the name for a unique breed of Vietnamese black pigs originating from the mountainous Sapa region. In Sapa, locals let these pigs to roam free and find their own food in the forest and gardens, which is why the meat is so sweet in flavor.
The meat is usually roasted or grilled, and it turns the color of honey once roasted. The skin is brittle and crisp, while the meat is soft and succulent in texture, with very little fat. Cắp nách pigs are small, with a weight of less than 20 kilograms, so they are traditionally carried in between people's armpits once they've been bought.
