Brazo de Mercedes

Brazo de Mercedes is a traditional rolled cake originating from the Philippines and dating back to Spanish colonial times. The dessert consists of a sheet of fluffy meringue that's filled with custard. The custard ingredients usually include egg yolks, vanilla, condensed milk, and lime or lemon zest, while the meringue is made with egg whites, cream of tartar, and sugar.
