Bis riha is a traditional stew originating from the Maldives. This curry is usually made with a combination of eggs, onions, garlic, coconut milk, dried fish, hot peppers, cumin, turmeric, dill, cinnamon, pandan leaves, curry leaves, salt, and oil.
The eggs are boiled, peeled, then fried until golden. The rest of the ingredients are sautéed in oil and simmered in coconut milk. Near the end of cooking, the eggs are added to the curry and simmered for a few more minutes. Once prepared, bis riha is traditionally served with roshi flatbread on the side.
