White Istrian truffles (lat. Tuber magnatum pico) are some of the finest and more prized truffles in the world, found primarily in the Motovun forest near the Mirna River, are prized for their intense aroma and flavor, similar to the famous Alba truffles from Italy.


These truffles grow in limestone-rich soil that contributes to their unique taste profile, often described as intensely earthy with hints of garlic, musk, and a subtle sweetness. The Istrian white truffle season runs from late September through December, during which these truffles are foraged by specially trained dogs, as their value and delicate structure require precise handling.


Due to their rarity and distinct flavor, white Istrian truffles are typically used as a finishing element in high-end cuisine, particularly when shaved over pasta, risotto, or eggs, to elevate the dish with their unique fragrance.
