Named for the milky-white flowers of the native Galax evergreen, Galax is a washed-curd, natural rind cheese similar to Gouda. Its mild flavor and smooth, buttery texture bring out the natural sweetness of the milk, with hints of walnut in the finish.

Appalachian is a cheese produced by Meadow Creek Dairy. It is known for its semi-soft texture and smooth, buttery flavor with a slight tang. This cheese is crafted using traditional methods, and the milk comes from the dairy's own herd of grass-fed cows.

The cheese is aged for about 60 days to develop its unique characteristics.

Grayson is a very flavorful cheese which stands well on its own but is also excellent with bread or dried fruit. It pairs well with a full bodied white wine and ins assertive enough for a medium red, but we feel Grayson is at its most excellent served with beer.

TasteAtlas food rankings are based on the ratings of the TasteAtlas audience, with a series of mechanisms that recognize real users and that ignore bot, nationalist or local patriotic ratings, and give additional value to the ratings of users that the system recognizes as knowledgeable. TasteAtlas Rankings should not be seen as the final global conclusion about food. Their purpose is to promote excellent local foods, instill pride in traditional dishes, and arouse curiosity about dishes you haven’t tried.
